Vegan Mushroom & Lentil Bolognese


bolognese is an all time favourite for many i’m sure! this is a healthy, vegan, meat, fat, gluten & grain free version.

● blend in a food processor:

– 1 onion

– 2 carrots

● once they’re all chopped small add:

– 1 cup chopped mushrooms {i used about 6 large brown mushrooms}.

● cook the onions, carrots & mushrooms in a pan on medium heat with a splash of water until softened.

● add two cans of rinsed lentils & two cans of diced tomatoes to the pan with 3 handfuls of baby spinach. season with garlic powder, oregano & basil {or other italian herbs}

● while the sauce is cooking prep your zoodles and cook them in a pan on medium heat until lightly softened.

● serve the zoodles & top with the bolognese, enjoy
