Sweet Potato Brownie Sneaky Veggie Baked Oatmeal

cure your chocolate cravings while getting some veggies in! what more can you want?!  baked breakfast superfood oatmeal including heavenly cacao, banana, sweet potato & some sneaky zucchini. you couldn’t start your day any better 🙌


● soak the following overnight in water or milk of choice:
– 2 tbsp rolled oats
– 2 tbsp raw buckwheat
– 1tsp chia seeds
– maca powder {optional}
● in the morning preheat the oven to 180° and add the following to the soaked oatmeal:
– 1/4 – 1/3 cup mashed sweet potato
– 1/4 cup grated zucchini
– 1 small or 1/2 large RIPE banana, mashed {probably about 1/4cup}
– 1+1/2tsp – 1 tbsp cacao powder depending on how rich you would like it.
👉 i don’t add any sweetners as the banana works quite well, but feel free.
● pour into a coconut oil greased ramekin & pop into the oven for about 35 minutes. it’s nice when it has a smooshy, fudgy consitency
● allow to cool a bit before consuming and top with your choice of goodies like sliced banana, strawberries or nut butter! i also like to pour almond milk over the top before eating as well, this also cools it down if you’re impatient like me 👌
