Pumpkin Granola

Refined sugar free pumpkin granola! Majority of store brought mueslis & granolas have added sugars so i like to make my own. That way you know what’s in them & it’s also a ton cheaper! No ripe bananas & being low on muesli in my pantry means i had to get creative this time! I tried out something different then my usual banana muesli & decided on pumpkin!

● preheat oven to 170°C
● combine the following in a large bowl:
– 1/2 cup mashed pumpkin
– 1/2 tsp of ground cinnamon
– 1 tbsp natural sweetner {rice malt syrup, pure maple syrup or honey – i used rice malt} you can add more but i like to make my granola’s low in sugar as the fruits i add make it sweet enough.
● then add:
– 3 cups rolled oats
– 1/4 cup of seeds {i used pepitas & sunflower seeds}
– 1/2 cup chopped nuts {walnuts, almonds, cashews ect}

● stir until well combined.
● line two baking trays with baking paper & spread the mixture out evenly.
● pop into the oven for 10 minutes.
● take out & crumble the mixture so it cooks evenly & then pop it back in for another 5.
● allow to cool completely then add your add-ins. {sultanas, cranberries, shredded coconut ect.}
● store in an airtight container.

It’s perfect for yoghurt or oatmeal toppings, with milk or as a snack on the go by itself!
