Oven Baked Pumpkin & Chickpea Patties – Vegan, Grain & Gluten Free


● preheat oven to 180°
● combine the following in a food processor:
– 1 can chickpeas
– 1/2 cup mashed pumpkin
– handful of baby spinach
– 1 tsp coconur flour
– 1/4 tsp of garlic powder & paprika
– 1 tsp of chopped chives & parsley
– crack of salt and pepper
● line a baking tray with baking paper
● scoop out and flatten mixture into mini-patty size circles.
● pop in the oven for 20 minutes, carefully flip them & then pop them back into the oven for a other 20 until cooked.
