Chocolate “Good Enough for Breakfast” Sweet Potato Superfood Mousse (Vegan, Gluten Free, Dairy Free, Grain Free, Sugar Free, Low Fat, Nut Free, Paleo)

IT’S MY BIRTHDAY!
So, chocolate mousse for breakfast is totally allowed. but don’t worry guys it’s made from veggies. It’s inspired by the wonderful The Accommodating Chef, Summer’s recipe can be found here: theaccommodatingchef.com/?s=sweet+potato+mousse&submit=Search

I love this as it’s low fat, unlike avocado mousse, plus it’s vegan, 100% healthy & it’s got a sneaky serving of veggies! It’s also free of sugar, grains & dairy and packed with superfoods which means it’s good enough for breakfast or as a dessert!

● in a food processor combine:
– 1 – 1&1/2 cups sweet potato mash
– 2 tbsp cacao powder
– 1 tsp soaked chia seeds
– 2 tbsp date paste or sweetner {if you have a sweet tooth, but i’ll probably change it to 2 tsp next time as i’m a fan of rich cacao}
– 1/4 tsp maca powder {omit for dessert version as maca powder is energizing}
– dash of cinnamon
– 1/3 cup almond milk
● pop in the fridge to chill for 30+ minutes & then enjoy the chocolatey goodness.. you wont believe it’s healthy!
