Baked Carrot & Banana Oatmeal

i like to get as many veggies as i can into my day and i love getting some in at breakfast time! esepcially when you can still get a sweet breakfast along with it!

● soak the following in water prior {i soak mine overnight but an hour or so can suffice}
– 1/3 cup rolled oats
– tsp chia seeds
● before baking add:
– 1/2 cup grated carrot
– 1 mashed ripe banana {you can reserve a few slices for the topping if you wish}
– a few shakes of cinnamon
– 1/2 tsp maca powder {optional}
*note: i don’t add any sweetner as the banana does me just fine but you may add some if you wish.
● pour into a coconut oil greased ramekin – top with banana slices if you had set some aside – and bake in the oven on 180° for 30 minutes.
● allow to cool slightly before eating if you can handle the wait!

top with whatever you desire – peanut butter is always a good choice!
