These cookiea are super quick & easy, vegan, oil & nut free and predominantly gluten free (use GF oats if intollerant)
● preheat the oven to 180°
– 1 & 1/2c oat flour (ground or blended oats)
– 2 medium bananas
– 1 – 2 tbsp coconut sugar
– 1 – 2 tbsp cacao nibs
– dash or two of cinnamon
● process the bananas in a food processor until soft & then add in the flour & coconut sugar. then stir through the cacao nibs.
● place some baking paper on a baking tray and form cookie shapes leaving at least 1cm between each one & pop in the oven for 10 – 15 minutes till brown on the outsides
● best eaten on the day or the following two days as they can go a little dry to them being oil free!
